Ingredients
  

  • 2 tablespoons olive oil divided
  • 1 pound ground turkey 85/15 lean
  • 1 large onion diced
  • 3 stalks celery diced
  • 2 cloves garlic minced
  • cups long grain white rice uncooked
  • 3 cups chicken broth kosher certified
  • 1 cup water
  • 2 teaspoons dried sage
  • 1 teaspoon dried thyme
  • 1 teaspoon kosher salt or to taste
  • ½ teaspoon black pepper freshly ground
  • ¼ teaspoon poultry seasoning
  • 1 cup frozen peas
  • 2 tablespoons fresh parsley chopped for garnish

Method
 

  1. Preheat your oven to 375°F (190°C). Heat 1 tablespoon of olive oil in a large oven-safe skillet or Dutch oven over medium-high heat.
  2. Add the ground turkey and cook, breaking it up with a wooden spoon, until browned and cooked through, about 6-8 minutes. Transfer turkey to a plate and set aside.
  3. Add the remaining tablespoon of oil to the same pan. Add diced onion and celery, cooking until softened, about 5 minutes. Add minced garlic and cook for another 30 seconds until fragrant.
  4. Stir in the uncooked rice, coating it with the oil and vegetables. Cook for 2 minutes, stirring frequently, until the rice is lightly toasted.
  5. Add the chicken broth, water, sage, thyme, salt, pepper, and poultry seasoning. Stir well to combine and bring to a simmer.
  6. Return the cooked turkey to the pan and stir gently to distribute throughout the rice mixture. Cover tightly with a lid or aluminum foil.
  7. Transfer to the preheated oven and bake for 35 minutes. Remove from oven and quickly stir in the frozen peas without removing the cover for too long.
  8. Cover again and bake for an additional 10 minutes, or until the rice is tender and has absorbed most of the liquid.
  9. Let stand for 5 minutes before serving. Fluff with a fork and garnish with fresh chopped parsley.

Notes

This casserole can be made ahead and reheated. Store covered in the refrigerator for up to 3 days. Add a splash of broth when reheating to prevent drying out. You can substitute ground chicken for turkey if preferred. For extra flavor, use turkey or vegetable broth instead of chicken broth.
