  • 1 tablespoon ketchup

Prepare the Chicken

Make the Batter
  1. In a large bowl, whisk together 1 cup all-purpose flour, 1/2 cup cornstarch, 1 teaspoon baking powder, 1 teaspoon garlic powder, 1 teaspoon onion powder, and 1 teaspoon kosher salt.
  2. Gradually add 3/4 cup cold water while whisking until you have a smooth batter that coats the back of a spoon. The consistency should be like thick pancake batter.
Prepare the Sauce
  1. Mince 2 cloves garlic and 1 tablespoon fresh ginger very finely.
  2. In a small saucepan, combine 3 tablespoons soy sauce, 2 tablespoons rice vinegar, 3 tablespoons sugar, 2 tablespoons ketchup, and 1 teaspoon sesame oil. Whisk until smooth.
  3. Mix 1 tablespoon cornstarch with 2 tablespoons cold water to make a slurry. Set aside.
Fry the Nuggets

Notes

The key to crispy nuggets is maintaining the oil temperature at 350°F. If it drops too low, the coating will absorb oil and become greasy. These are best eaten fresh, but you can reheat leftovers in a 400°F oven for 5 minutes to restore some crispiness. The sauce can be made ahead and reheated when ready to serve.
