Ingredients
  

  • 4 boneless skinless chicken breasts pounded to even thickness
  • 1/2 cup all-purpose flour for dredging
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper freshly ground
  • 3 tablespoons olive oil divided
  • 8 ounces cremini mushrooms sliced
  • 3 cloves garlic minced
  • 3/4 cup kosher Marsala wine
  • 1 cup chicken stock low sodium
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon fresh thyme or 1 tsp dried

Method
 

  1. Season chicken breasts with salt and pepper. If they're thick, pound them to about 3/4 inch thickness for even cooking.
  2. Combine flour with a pinch of salt and pepper on a plate. Dredge each chicken breast in the seasoned flour, shaking off excess.
  3. Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add chicken and cook 4-5 minutes per side until golden brown and cooked through. Transfer to a plate and cover loosely with foil.
  4. Add remaining tablespoon of oil to the same pan. Add mushrooms and cook 5-6 minutes until they release their moisture and start to brown.
  5. Add garlic and cook for 30 seconds until fragrant. Pour in Marsala wine, scraping up any browned bits from the bottom of the pan.
  6. Add chicken stock and bring to a simmer. Cook for 5-7 minutes until the sauce reduces by about half and thickens slightly.

Notes

Make sure to use kosher-certified Marsala wine. The sauce will thicken slightly as it cools, so don't over-reduce it. Leftovers keep in the refrigerator for up to 3 days and reheat well in the microwave or stovetop.
