  • 4 boneless, skinless chicken breasts about 1.5 lbs total
  • 2 cups cornflakes cereal
  • 1/2 cup grated kosher hard cheese parmesan-style
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian seasoning

  • 1/4 teaspoon black pepper
  • 3 tablespoons olive oil
  • 1 cup marinara sauce
  • 1 cup shredded kosher mozzarella-style cheese
  • 2 tablespoons fresh basil chopped, for garnish

Method
 

  1. Preheat your oven to 425°F. Place chicken breasts between plastic wrap or parchment paper and pound to 1/2 inch thickness using a meat mallet or rolling pin.
  2. Crush the cornflakes in a food processor or place them in a sealed bag and crush with a rolling pin until they form coarse crumbs. Mix with the grated hard cheese, garlic powder, Italian seasoning, salt, and pepper in a shallow dish.
  3. Season both sides of the flattened chicken with salt and pepper. Heat olive oil in a large oven-safe skillet over medium-high heat.
  4. Press each chicken breast into the cornflake mixture, coating both sides well. The mixture should stick to the chicken.
