Ingredients
  

  • 2 medium eggplants sliced into 1/4 inch rounds
  • 2 tablespoons olive oil for brushing
  • 4 pita breads
  • 4 hard-boiled eggs peeled and sliced
  • 1 cup hummus store-bought or homemade
  • 1 cup Israeli salad diced cucumbers, tomatoes, and parsley
  • 1 cup tahini sauce store-bought or homemade
  • 1/4 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. Brush eggplant slices with olive oil and season with salt and pepper.
  3. Arrange eggplant slices on a baking sheet and roast for 20-25 minutes, flipping halfway through, until golden and tender.
  4. Warm pita breads in the oven for the last 5 minutes of the eggplant's cooking time.
  5. To assemble, spread a generous amount of hummus inside each pita.
  6. Layer in roasted eggplant, sliced hard-boiled eggs, Israeli salad, and drizzle with tahini sauce.
  7. Serve immediately, enjoying the blend of flavors and textures.

Notes
