Ingredients
  

Burekas
  • 1 package puff pastry sheets thawed
  • 1 cup feta cheese crumbled
  • 1/2 cup ricotta cheese
  • 1 large egg beaten
  • 1 egg yolk for egg wash
  • 1 tbsp water
  • 1 tbsp sesame seeds for topping
  • 1 pinch black pepper optional

Method
 

Prepare the Filling
  1. In a mixing bowl, combine the crumbled feta cheese, ricotta cheese, beaten egg, and black pepper. Mix until well combined and set aside.
Assemble the Burekas
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Roll out the thawed puff pastry sheets on a lightly floured surface. Cut each sheet into squares about 4 inches on each side.
  3. Place a tablespoon of the cheese filling in the center of each square.
  4. Fold each square into a triangle, pressing the edges together to seal. Use a fork to crimp the edges for a decorative touch.
Bake the Burekas
  1. In a small bowl, mix the egg yolk with water to make an egg wash.
  2. Brush the tops of the Burekas with the egg wash and sprinkle with sesame seeds.
  3. Place the Burekas on the prepared baking sheet and bake for 20-25 minutes, or until golden brown and puffed.

Notes

Burekas can be made ahead of time and frozen before baking. Simply thaw and bake as directed. Try different fillings like mashed potatoes or sautéed mushrooms for variation.
