Method
Make the Seasoning
- In a small bowl, whisk together the chili powder, cumin, smoked paprika, oregano, garlic powder, onion powder, salt, black pepper, and cayenne (if using). Set aside.
Cook the Beef
- Heat the vegetable oil in a large skillet over medium-high heat. Add the diced onion and cook for 3-4 minutes until softened.
- Add the minced garlic and cook for another 30 seconds until fragrant.
- Add the ground beef and break it up with a wooden spoon. Cook for 6-8 minutes, stirring occasionally, until the beef is well browned and most of the liquid has evaporated.
- Stir in the prepared taco seasoning and cook for 1 minute until fragrant.
- Add the water and stir to combine. Simmer for 2-3 minutes until the liquid is mostly absorbed and the mixture is slightly saucy. Taste and adjust seasoning if needed.
Assemble the Tacos
- If using hard taco shells, warm them according to package directions. For soft tortillas, heat them in a dry skillet for 30 seconds per side or wrap in damp paper towels and microwave for 20 seconds.
- Fill each taco shell with the seasoned ground beef mixture.
- Top with shredded lettuce, diced tomatoes, red onion, and cilantro as desired.
- Serve immediately with lime wedges on the side.
Notes
The homemade seasoning mix can be made ahead and stored in an airtight container for up to 6 months. Leftover cooked beef keeps in the refrigerator for up to 3 days and reheats well in the microwave or on the stovetop with a splash of water. For a milder version, reduce or omit the cayenne pepper. The beef mixture also works great for quesadillas, burrito bowls, or nachos.
