  • 1 medium yellow onion diced
  • 1 medium red bell pepper diced
  • 2 cloves garlic minced
  • 1 1/2 pounds ground turkey 93/7 lean
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper freshly ground
  • 3/4 cup ketchup
  • 1/4 cup tomato sauce
  • 3 tablespoons brown sugar packed
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Worcestershire sauce kosher certified
  • 1 tablespoon yellow mustard
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 6 whole hamburger buns for serving

Method
 

  1. Heat vegetable oil in a large skillet or wide pan over medium-high heat.
  2. Add diced onion and red bell pepper to the hot oil. Cook for 4-5 minutes, stirring occasionally, until vegetables are softened and onion is translucent.
  3. Add minced garlic and cook for another 30 seconds until fragrant.
  4. Add ground turkey to the pan, breaking it up with a wooden spoon. Season with salt and pepper. Cook for 6-8 minutes, stirring frequently, until turkey is browned and cooked through with no pink remaining.
  5. In a small bowl, whisk together ketchup, tomato sauce, brown sugar, apple cider vinegar, Worcestershire sauce, mustard, paprika, and garlic powder.
  6. Pour the sauce mixture over the cooked turkey and vegetables. Stir to combine well.
  7. Reduce heat to medium-low and simmer for 5-7 minutes, stirring occasionally, until sauce has thickened slightly and flavors have melded together.
  8. Taste and adjust seasoning with additional salt, pepper, or brown sugar as needed.
  9. Serve hot on hamburger buns with pickles and your favorite sides.

Notes

Store leftover sloppy joe mixture in the refrigerator for up to 3 days. Reheat gently on the stove or in the microwave. The mixture can also be frozen for up to 3 months. For a spicier version, add 1/4 teaspoon cayenne pepper or a few dashes of hot sauce. Make sure your Worcestershire sauce is kosher certified, as some brands contain anchovies.
