Ingredients
  

  • 4 slices challah bread or good white bread about 1/2 inch thick
  • 3 tablespoons kosher butter softened
  • 3 ounces sharp kosher cheddar cheese thinly sliced or grated
  • 2 ounces kosher muenster cheese thinly sliced

Method
 

  1. Spread butter on one side of each bread slice, making sure to cover all the way to the edges.
  2. Place two slices butter-side down in a large skillet or griddle. Layer the cheddar and muenster cheese evenly over the bread.
  3. Top with remaining bread slices, butter-side up.
  4. Heat the skillet over medium-low heat. Cook the sandwiches for 3-4 minutes until the bottom is golden brown and crispy.
  5. Carefully flip the sandwiches using a spatula. Cover the pan with a lid and cook for another 3-4 minutes until the second side is golden and the cheese is completely melted.
  6. Remove from heat and let rest for 1 minute before cutting diagonally. Serve immediately while hot and crispy.

Notes

For extra flavor, try adding a thin layer of Dijon mustard or a few thin slices of kosher dill pickle. Make sure your butter is softened for easy spreading. If the bread is browning too quickly, reduce the heat to low. The key is giving the cheese time to melt completely.
