  • 4 large yellow onions thinly sliced
  • 3 tablespoons olive oil
  • 2 tablespoons all-purpose flour can be substituted with gluten-free flour
  • 8 cups vegetable broth ensure it's kosher certified
  • 1 teaspoon salt or to taste
  • 1/2 teaspoon black pepper freshly ground
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 4 slices baguette toasted and kosher
  • 1 cup kosher cheese such as shredded mozzarella or Gruyère-style

Method
 

  1. In a large pot, heat the olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they are soft and caramelized, about 25-30 minutes.
  2. Sprinkle the flour over the onions and stir well to coat. Cook for an additional 2 minutes to remove the raw flour taste.
  3. Gradually add the vegetable broth, stirring constantly to prevent lumps. Increase the heat to bring the soup to a gentle simmer.
  4. Add the salt, black pepper, thyme, and bay leaf. Reduce the heat to low and let the soup simmer for 20-30 minutes, allowing the flavors to meld.
  5. Preheat your oven's broiler. Ladle the soup into oven-safe bowls, place a slice of toasted baguette on top of each, and sprinkle generously with the cheese.
  6. Place the bowls under the broiler until the cheese is melted and bubbly, about 3-5 minutes. Serve hot, with caution as the bowls will be very hot.

Notes

For added flavor, consider adding a splash of kosher white wine to the onions before adding the broth. Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently before serving.
