Method
- Preheat your oven to 425°F. Line a baking dish with parchment paper or lightly grease it with olive oil.
- Pat the cod fillets completely dry with paper towels. This helps them brown nicely and prevents steaming.
- In a small bowl, mix together 3 tablespoons olive oil, minced garlic, lemon zest, half the lemon juice, parsley, dill, salt, and pepper.
- Place the cod fillets in the prepared baking dish. Brush the herb mixture all over both sides of the fish.
- Bake for 12-15 minutes, or until the fish flakes easily with a fork and is opaque throughout. Don't overcook or it will become dry.
- Remove from oven and immediately drizzle with the remaining lemon juice and a tablespoon of fresh olive oil.
- Let rest for 2-3 minutes before serving. Garnish with additional fresh herbs if desired.
Notes
Fish is done when it reaches an internal temperature of 145°F. If your fillets are thicker than 1 inch, add 2-3 minutes to the cooking time. Store leftovers in the refrigerator for up to 2 days. This recipe works well with other white fish like haddock or halibut too.
