Ingredients
  

  • 2 tablespoons olive oil extra virgin
  • 1 whole chicken cut into pieces
  • 1 large onion finely chopped
  • 3 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground ginger
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground cinnamon
  • 1 cup chicken broth low sodium
  • 1 preserved lemon quartered
  • 1 cup green olives pitted
  • 1/4 cup fresh cilantro chopped

Method
 

  1. Heat olive oil in a large tagine or Dutch oven over medium heat.
  2. Add chicken pieces and brown on all sides, about 8 minutes. Remove and set aside.
  3. In the same pot, add onions and garlic, sauté until softened, about 5 minutes.
  4. Stir in cumin, ginger, turmeric, and cinnamon, cooking for 1 minute until fragrant.

  6. Bring to a simmer, cover, and cook for 45 minutes, or until chicken is tender.
