Turkey burgers often turn out dry because turkey is much leaner than beef. These stay juicy thanks to finely diced onion and an egg in the mix, and they’re served with sliced avocado and crisp oven-roasted sweet potato fries.
Keeping Turkey Burgers Juicy
Use ground turkey with some fat (93/7 is a good balance) and season it generously, since turkey is milder than beef. The diced onion releases moisture as the burgers cook, and the egg holds them together. Handle the meat gently, and don’t press the patties with a spatula in the pan; that squeezes out the juices. Cook to 165°F in the center.
Timing the Fries
Put the sweet potato fries in the oven first. Cut them to an even half-inch thickness, toss with oil and seasoning, and spread them out in a single layer so they roast rather than steam. They take about as long as the burgers once the patties hit the pan, so everything is ready together.
Kosher Notes
This is a meat (fleishig) meal. Avocado adds the creaminess that cheese would otherwise provide. Check that your hamburger buns are pareve, because some breads are made with milk or butter. Leftover burgers keep for 3 days in the fridge; reheat the fries in a hot oven to crisp them up again.

Method
- Preheat oven to 425°F. Line a large baking sheet with parchment paper.
- Wash and peel sweet potatoes, then cut into 1/2-inch thick strips. Try to keep them uniform for even cooking.
- Toss sweet potato strips with olive oil, salt, garlic powder, and pepper in a large bowl until evenly coated.
- Arrange in a single layer on the prepared baking sheet, making sure they don't overlap.
- Roast for 25-30 minutes, flipping once halfway through, until edges are crispy and golden brown.
- While sweet potatoes are roasting, combine ground turkey, diced onion, beaten egg, minced garlic, parsley, paprika, salt, and pepper in a large bowl.
- Mix gently with your hands until just combined. Don't overwork the meat or the burgers will be tough.
- Divide mixture into 4 equal portions and shape into patties about 3/4-inch thick. Make a small indent in the center of each patty to prevent puffing up.
- Heat olive oil in a large skillet over medium-high heat, or preheat your grill.
- Cook burgers for 5-6 minutes on the first side without pressing down. Flip and cook another 4-5 minutes until internal temperature reaches 165°F.
- Let burgers rest for 2-3 minutes before serving.
- Lightly toast hamburger buns if desired.
- Place each burger on a bun bottom and top with avocado slices, lettuce, tomato, and red onion if using.
- Serve immediately with the hot sweet potato fries on the side.
