Ingredients
  

  • 4 pounds kosher beef chuck roast trimmed of excess fat
  • 2 tablespoons olive oil
  • 2 onions sliced
  • 4 cloves garlic minced
  • 1 cup ketchup kosher certified
  • 1/2 cup brown sugar
  • 1/4 cup apple cider vinegar
  • 2 tablespoons Worcestershire sauce kosher certified
  • 1 tablespoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon black pepper
  • 1 teaspoon kosher salt

Method
 

  1. Heat olive oil in a large skillet over medium-high heat. Sear the beef on all sides until browned, about 4 minutes per side.
  2. Place the beef in a slow cooker. Add onions and garlic on top.
  3. In a bowl, mix ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, smoked paprika, cumin, black pepper, and kosher salt.
  4. Pour the sauce over the beef and onions.
  5. Cover and cook on low for 8 hours, or until the beef is tender and easily pulls apart with a fork.
  6. Remove the beef from the slow cooker and shred with two forks. Return the shredded beef to the slow cooker and mix with the sauce.
  7. Serve the pulled beef on challah buns or with a side of roasted vegetables.

Notes

For a spicier version, add a teaspoon of cayenne pepper. Store leftovers in an airtight container in the refrigerator for up to 3 days.
