During Passover, foods made with leavened grain (chametz) are not eaten, so cakes and breads are replaced by matzo, matzo meal, almond flour, coconut and potato starch. The recipes below avoid chametz in their ingredient lists.
Always check that every packaged ingredient, including spices, oils, chocolate and baking powder, carries a kosher for Passover certification. Customs on kitniyot (rice, corn and legumes) differ between communities, so follow the practice of your family or rabbi.
