- Wash and peel the potatoes. Cut them into fries about 1/2 inch thick and 3-4 inches long. Try to keep them roughly the same size so they cook evenly.
- Place the cut potatoes in a large bowl and cover completely with cold water. Let them soak for 30 minutes to remove excess starch.
- Drain the potatoes and pat them completely dry with paper towels. This step is crucial for getting crispy fries.
- In a large bowl, toss the dried potatoes with the oil until they're evenly coated.
- Sprinkle with salt, garlic powder, and paprika if using. Toss again to distribute the seasonings.
- Preheat your air fryer to 380°F for 3 minutes.
- Working in batches if necessary, place the fries in the air fryer basket in a single layer. Don't overcrowd them.
- Cook for 12-15 minutes, shaking the basket every 5 minutes to ensure even cooking.
- Check for doneness. The fries should be golden brown and crispy on the outside. Cook for an additional 2-3 minutes if needed.
- Remove from the air fryer and season immediately with additional salt if desired. Serve hot.
Notes
For best results, don't skip the soaking step – it really does make a difference in the final texture. Store leftover fries in the refrigerator for up to 3 days and reheat in the air fryer at 350°F for 3-4 minutes. Different potato varieties will give slightly different results, but russets work best for that fluffy interior.
