Method
- Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan with non-stick spray or line with parchment paper.
- In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
- Add the oil, applesauce, eggs, and vanilla extract to the dry ingredients and mix until just combined.
- Gently fold in the diced apples until evenly distributed.
- Pour the batter into the prepared baking pan, spreading it out evenly.
- For the crumb topping, combine the flour, brown sugar, and cinnamon in a bowl. Cut in the margarine using a pastry cutter or fork until the mixture resembles coarse crumbs.
- Sprinkle the crumb topping evenly over the cake batter.
- Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for at least 15 minutes before slicing and serving.
Notes
For a variation, add a handful of chopped nuts to the crumb topping for added texture. Store any leftovers in an airtight container at room temperature for up to 3 days.
