Perfect Air Fryer French Fries - Crispy Kosher Comfort Food - American recipe
There's nothing quite like the satisfaction of biting into a perfectly crispy french fry, especially when you've made them at home in your air fryer. I used to think restaurant fries were always going to be better than anything I could make in my kitchen, but then I figured out the secret to getting that golden, crunchy exterior with a fluffy interior using just hot air circulation. The air fryer has completely changed how I approach making fries at home. You don't need a vat of oil or the mess that comes with deep frying. What you do need is the right type of potato and a few simple techniques that I've learned through plenty of trial and error. Russet potatoes work best because of their high starch content, which gives you that fluffy texture inside while the outside gets beautifully crisp. The key is in the preparation. I always soak my cut potatoes in cold water for at least 30 minutes to remove excess starch, then pat them completely dry before seasoning. This step makes a huge difference in achieving that restaurant-quality crunch. A light coating of oil helps the seasoning stick and promotes even browning, but you're using a fraction of what you'd need for traditional frying. These fries are perfect alongside a kosher burger, grilled chicken, or even just on their own as a satisfying snack. I love serving them with homemade ketchup or a simple garlic aioli made with kosher mayonnaise. They're also fantastic with my favorite kosher salt and pepper seasoning blend.

Ingredients

  • 2 pounds russet potatoes large, uniform size
  • 1 tablespoon vegetable oil or canola oil
  • 1 teaspoon kosher salt plus more for serving
  • 1/4 teaspoon black pepper freshly ground
  • 1/2 teaspoon garlic powder optional
  • 1/4 teaspoon paprika optional, for color

Method

  1. Wash and peel the potatoes. Cut them into evenly sized fries, about 1/4 to 1/2 inch thick. Try to keep them uniform so they cook evenly.
  2. Place the cut fries in a large bowl and cover with cold water. Let them soak for 30 minutes to remove excess starch.
  3. Drain the potatoes and pat them completely dry with clean kitchen towels or paper towels. This step is crucial for crispiness.
  4. In a large bowl, toss the dried fries with oil, salt, pepper, and any optional seasonings until evenly coated.
  5. Preheat your air fryer to 380°F (193°C) for 3 minutes.
  6. Place the fries in the air fryer basket in a single layer. You may need to work in batches to avoid overcrowding.
  7. Cook for 12 minutes, then shake the basket and rearrange the fries. Cook for another 6-8 minutes until golden brown and crispy.
  8. Remove the fries and immediately season with additional kosher salt while they're still hot. Serve immediately for best texture.

Notes

For extra crispy fries, you can double-cook them: air fry for 8 minutes at 350°F, then increase to 400°F for 5-7 minutes. Store leftover fries in the refrigerator for up to 3 days and reheat in the air fryer for 2-3 minutes. Different air fryer models may require slight timing adjustments.
