Ingredients
  

  • 4 pieces chicken breast halves boneless and skinless
  • 1/2 cup fresh lemon juice about 2-3 lemons
  • 1 tablespoon lemon zest freshly grated
  • 3 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 cup chicken broth low sodium
  • 1 tablespoon honey

Method
 

  1. In a large bowl, combine lemon juice, lemon zest, olive oil, minced garlic, kosher salt, black pepper, oregano, and thyme. Mix well to create the marinade.
  2. Place the chicken breasts in the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more intense flavor.
  3. Preheat your oven to 375°F (190°C).
  4. Heat an oven-safe skillet over medium-high heat and add a little olive oil. Once hot, sear the chicken breasts on each side for about 3-4 minutes, until golden brown.
  5. Pour the remaining marinade over the chicken, add the chicken broth, and drizzle with honey.
  6. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (75°C).
  7. Remove from the oven and let the chicken rest for 5 minutes before serving.
