- In a large bowl, combine lemon juice, lemon zest, olive oil, minced garlic, kosher salt, black pepper, oregano, and thyme. Mix well to create the marinade.
- Place the chicken breasts in the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more intense flavor.
- Preheat your oven to 375°F (190°C).
- Heat an oven-safe skillet over medium-high heat and add a little olive oil. Once hot, sear the chicken breasts on each side for about 3-4 minutes, until golden brown.
- Pour the remaining marinade over the chicken, add the chicken broth, and drizzle with honey.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (75°C).
- Remove from the oven and let the chicken rest for 5 minutes before serving.
