Apple crisp is an easy fall dessert: sliced apples tossed with sugar, cinnamon and nutmeg, baked under a crunchy topping of oats, brown sugar and margarine until bubbling and golden.
Choosing the Apples
Use a mix of tart and sweet apples, such as Granny Smith and Honeycrisp. All-sweet apples make a cloying filling, and tart ones keep their shape and balance the sugar. Add an extra tablespoon of sugar if your apples are very tart. Keep the margarine cold and work it into the topping until it forms clumps, which bake into crunchy clusters.
Kosher Notes
Made with margarine instead of butter, this crisp is pareve, so it can be served after a meat meal, including Shabbat dinner. Check that your margarine and oats carry a pareve hechsher. It’s a popular dessert for Rosh Hashanah and Sukkot.
Storing
Store covered at room temperature for up to 3 days. Rewarm individual portions in the microwave for 30 seconds.

Ingredients
Method
- Preheat oven to 375°F (190°C). Grease a 9x9-inch baking dish with margarine or cooking spray.
- Peel, core, and slice apples into 1/4-inch thick pieces. You should have about 6 cups of sliced apples.
- In a large bowl, toss the sliced apples with granulated sugar, flour, cinnamon, nutmeg, and lemon juice until evenly coated.
- Transfer the apple mixture to the prepared baking dish and spread evenly.
- In a medium bowl, combine oats, flour, brown sugar, cinnamon, and salt.
- Add the cold margarine pieces and use your fingers to work them into the dry ingredients until the mixture resembles coarse crumbs with some larger clumps.
- Sprinkle the oat topping evenly over the apples.
- Bake for 40-45 minutes, until the topping is golden brown and the apples are tender when pierced with a fork.
- Let cool for 10 minutes before serving. Serve warm or at room temperature.
