Ingredients
  

  • 1.5 pounds boneless, skinless chicken thighs also known as pargiot
  • 2 tablespoons olive oil extra virgin recommended
  • 3 cloves garlic minced
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon ground cumin
  • 1 teaspoon ground paprika
  • 1 teaspoon kosher salt
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon ground coriander
  • 0.25 teaspoon ground turmeric
  • 0.25 teaspoon cayenne pepper optional, for heat

Method
 

  1. In a large bowl, combine olive oil, garlic, lemon juice, cumin, paprika, salt, black pepper, coriander, turmeric, and cayenne pepper. Mix well to create the marinade.
  2. Add the chicken thighs to the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for better flavor.
  3. Preheat your grill to medium-high heat. Once hot, place the marinated chicken thighs on the grill.

Notes
