Minute steak is a quick-cooking cut of beef perfect for busy weeknights or a Shabbat meal when time is of the essence. Its origins trace back to the concept of quickly searing thin cuts of meat, a technique beloved in many cultures for its speed and ability to lock in flavors. This kosher version embraces the simplicity of fresh herbs and garlic, creating a flavorful dish without the need for lengthy preparation. Serve it alongside roasted vegetables or a crisp green salad for a complete meal. If you enjoy this, you might also like our recipes for ‘Herb-Crusted Roast Beef’ or ‘Quick Garlic Chicken’.
Tips
Minute steaks are thin, so they cook in a minute or two per side. Pat them dry after marinating and make sure the pan is very hot before adding them, so they brown before they overcook. Cook in batches rather than crowding the pan.
Kosher Notes
This is a meat (fleishig) recipe. Buy minute steak from a kosher butcher; it is usually cut from the shoulder (chuck), which is a kosher cut. Serve it with pareve sides such as roasted potatoes or salad.
Serving and Storage
Slice leftover steak thinly and use it in sandwiches or over rice. It keeps in the refrigerator for up to 3 days.

Method
- In a small bowl, whisk together the olive oil, lemon juice, minced garlic, kosher salt, black pepper, rosemary, and thyme to create the marinade.
- Place the minute steaks in a shallow dish. Pour the marinade over the steaks, ensuring they are well coated. Let them marinate for at least 10 minutes.
- Heat a large skillet over medium-high heat. Once hot, add the steaks to the pan, cooking for about 1-2 minutes on each side, or until browned and cooked through.
- Remove the steaks from the skillet and let them rest for a few minutes before serving.
