Pargiot, or boneless chicken thighs, are a beloved staple in many kosher kitchens. Originating from Middle Eastern cuisine, this dish has made its way into homes across the globe due to its juicy texture and rich flavor. Perfectly suited for a family dinner or a festive gathering, these grilled chicken thighs are marinated in an aromatic blend of spices that bring out the natural flavors of the meat. It’s a dish that pairs beautifully with sides like couscous or a refreshing cucumber salad. If you’re a fan of grilling techniques, this recipe will also guide you on how to achieve that perfect char while keeping the meat tender and juicy.

Ingredients
Method
- In a large bowl, combine olive oil, garlic, lemon juice, cumin, paprika, salt, black pepper, coriander, turmeric, and cayenne pepper. Mix well to create the marinade.
- Add the chicken thighs to the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for better flavor.
- Preheat your grill to medium-high heat. Once hot, place the marinated chicken thighs on the grill.
- Grill the chicken for about 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (75°C).
- Remove the chicken from the grill and let it rest for a few minutes before serving to allow the juices to redistribute.
